As the days get a little warmer and brighter, I’m finding that I’m less tempted to spend my mornings wrapped up in bed with a hot coffee and warm porridge. The sunshine and blue skies are a great motivating force, encouraging me to get up and go as soon as I wake up. This healthy breakfast is super-quick to put together and light as a feather- perfect for can-do mornings where you don’t want your breakfast to slow you down!
Prep: 5 mins
Serves 1
Ingredients
Handful red grapes, sliced in half
Handful blueberries
1 banana, peeled and sliced
2 tbsp natural yoghurt1
½ tbsp muesli
Recipe
Layer the bottom of your pot with the sliced banana
Top with 1 tbsp of muesli
Add 1 ½ tbsp natural yoghurt
Top with red grapes and blueberries
Add ½ tbsp. natural yoghurt
Top with remaining muesli
Good to know:
• Blueberries are packed full of anti-oxidants, and a great source of vitamin C
• Bananas increase Serotonin production, so are a great mood-booster, and are an excellent source of potassium
• Muesli is an excellent source of dietary fibre
